Cooking for Dhawan - Mulberry Jam

The mulberry tree in our was scattering the grass below with large, sweet, light green mulberries. Apart from the fact that I don't like stepping on them, thought I'd do something about them. So we picked them off the ground, sorted them... discarding the badly bruised ones and keeping the slightly ripe and ripe ones. Then we did what anyone else would have done... made jam!

You'll need:
500g mulberries, washed and destalked
500g sugar (reduce by up to 20% if you like)
2 medium sized lemons, squeezed into a bowl, no seeds
2 small cloves

What you need to do:
1. Put the mulberries, sugar, cloves and lemon juice into a pan
2. Stir briefly till the sugar is mixed in well and the mixture is about to boil
3. Simmer for 30 minutes
4. Take off the fire, let cool slightly, till its cool enough to eat without blowing
5. Store in a clean dry jar.

- Remember not to wait for too long or it'll stick to the pan.
- Don't keep for too long.
- Spread on toast, eat with pancakes or roll inside paranthas.
